You can experience all four seasons in a few days in Atlanta and this week was no exception. However, today we end up in the mid-60’s which is good enough for me to enjoy another Friday cocktail recipe!
I told you last week how I like fruity cocktails like the raspberry martini which uses Simply Raspberry Lemonade. This tequila mint cocktail recipe uses Simply Limeade. The Simply Juices line are not-from-concentrate and contain no high fructose corn syrup making them the perfect warm weather cocktail mixers.
The New South version of a mojito. I used tequila in this recipe but rum would be great to.
Ingredients
- 4 oz crushed ice
- 1 1/2 oz tequila (blanco or reposado)
- 8 oz Simply Limeade
- 1/2 oz simple syrup (Make your own or available in any grocery store)
- 1 tbs chopped fresh mint
- 2 oz club soda
Instructions
- Add ice, tequila, limeade, simple syrup and mint to cocktail shaker and shake vigorously
- Pour all contents into a highball glass. Or my preference, a mason jar!
- Top with club soda and garnish with mint and lime wedge
