My name is Jad and I’m the chef, husband and Mr. mom behind New South Food Company. New South started as a catering and personal chef business but quickly gained a following in the food blogging community. I specialize in gourmet southern dishes with what I call a New South twist. Think country French meets the south. If you’ve ever eaten your way around Charleston, SC you know what I mean!
I graduated from Johnson & Wales University in 1998 and started my professional culinary career in Charleston, SC. While in Charleston I worked at several award winning restaurants including 82 Queen and for James Beard nominated Chef Bob Waggoner at The Charleston Grill. I currently live in Atlanta, GA with my wife and two children and work to hone my culinary skills at Ink and Elm.
My food philosophy is to eat as little processed food as possible, grow as much of your own food as possible and live by the 80/20 rule. 80% healthy nutritious meals and 20% cheating! During the spring and summer months I can usually stick to a 90/10 rule but that goes all out the window October-December!
Here at New South I try to share my passion for local, fresh and minimally processed ingredients. Eating healthy doesn’t mean eliminating flavor or fat but it does require using fresh ingredients. Dried herbs bought from the store don’t have a place in the New South kitchen.
While I appreciate all forms of creative expression with food; you won’t find any molecular gastronomy recipes here. Only simple, fresh dishes which can be prepared in your home with relative ease.
Occasionally I visit local farms or markets in the southeast and share pictures, recipes and information to showcase these businesses.
I hope you enjoy the recipes here and please provide feedback. Do you have a suggestion that would make a recipe I have posted better? Leave a comment for everyone’s benefit.
