Unlike my experiment with the pineapple infused tequila recipe, this peach infused gin didn’t yield the mind shattering peach flavor I was secretly hoping for but it was still worth the effort.
As with other infused spirit recipes I’ve experimented with, the strong alcohol flavors are absorbed by the fruit which in turn releases some of the natural sugars. The final result is a smoother spirit with a hint of the infusing flavors. In the case of the pineapple tequila the flavor of the pineapple was very present in the final product. My guess is pineapple contains more sugars than peaches which helps to flavor the spirit.

Ingredients
- 2 oz peach infused gin
- 5 oz tonic water
- 1 lime wedge
- 2-3 peach wedges
Instructions
- Pour the gin and tonic in a highball glass and garnish with lime and peach wedges.
