People always claim to have a secret rub but all of them contain almost identical ingredients. I use a multi stage process on my meats when smoking and the rub is just the first step.
This seasoning blend works best on Ribs and Pork Butts. If possible rub onto the meat and let sit overnight.
Ingredients
- 4 Dried New Mexican Chilies
- 3/4 C. Fresh Ground Pepper and Kosher Salt Blend (recipe below)
- 1 C. Brown Sugar
- 1/2 Tbs Onion Powder
- 1 Tbs Old Bay Seasoning
- 1/2 Tbs Oregano
- 1/2 Tbs Garlic Powder
Instructions
- Remove stems and seeds from chilies and grind in food processor or blender until finely ground.
- Add Salt and Pepper mix and Sugar and pulse.
- Place contents into medium mixing bowl and add remaining ingredients.

- 3/4 C. Kosher Salt
Instructions
- Grind peppercorns in blender or cleaned coffee grinder.
- Mix with Salt.
