Did you know April is National Grilled Cheese Sandwich Month? Probably not because I didn’t either until I saw this collection of grilled cheese recipes. Who comes up with this stuff?
It did get me thinking about different types of sandwiches though.

You can pretty much slap anything between two slices of bread, cover it with cheese and put it on a buttered griddle and fall instantly in love.

Ingredients
- 1 tbs butter or spray
- 2 slices sourdough bread
- 3 slices fresh mozzarella (Comes in a round ball. usually found in deli section)
- 3 slices vine ripened tomatoes
- 2 basil leaves
- Salt and pepper to taste
- 1 tbs balsamic vinegar (Even better with balsamic vinegar reduction)
Instructions
- It's a grilled cheese. Don't complicate it.
- Coat a griddle or pan big enough to lay 2 slices of bread on with spray or butter and put over low-medium heat
- Place bread slices on griddle and layer 1 slice with mozzarella, tomatoes, basil and drizzle vinegar.
- Salt and pepper the tomatoes slices
- Cook for 4-5 minutes then cover with other slice of bread
- Cook another 2-3 minutes until cheese is melted
