I make these super easy vegetable pita pizzas when I’m in a rush and don’t feel like spending an hour in the kitchen. These pizzas can be prepped, cooked and on the table in 15 minutes! Can’t get any easier than that. I posted these pictures on Facebook one evening after seeing this recipe on A Couple Cooks and received so much positive review that i decided to post on the website. The nice thing about this vegetable pita pizza recipe is you can adjust it to make use of any vegetables you have in the fridge. I use pita halves in these pictures but you can also use tortilla wraps which comes out looking for like real pizzas.
Ingredients
- 2 whole Pita pockets split open and halved (or 2 burrito size tortillas)
- 1 tbs. Extra Virgin Olive Oil
- 2 Cups Fresh Spinach, sautéed
- 1 can of Diced Tomatoes, drained
- 1 Cup Mozzarella Cheese
- 2 tbs Chiffonade Basil
- Fresh Salt and Pepper to taste
Instructions
- Pre-heat oven to 400º
- Place pitas on cookie tray and drizzle with 1 tbs Olive Oil
- Add a can of drained diced tomatoes across all pitas
- Add sautéed spinach and any vegetables you have available
- Top with fresh basil
- Season with a dash of fresh salt a pepper on each pita
- Top each with cheese
- Bake for 10 minutes
