Salmon Salad
Ingredients
- Qty 2. 6 oz. Salmon Fillets
- 1 head Bibb lettuce, quartered
- 1/4 Red Onion, thinly sliced
- 2 ripe tomatoes, quartered
- 1/4 cup candied pecans
- 1/4 cup gorgonzola cheese, crumbled
- 2 tbs. extra virgin olive oil or your favorite dressing
- medium grain sea salt to taste
Instructions
- Heat a cast iron skillet over high heat and drizzle enough olive oil to coat the bottom of the pan.
- Season the Salmon fillets generously with salt. This will create a nice crust when you sear it
- Before the oil starts to smoke sear the salmon seasoned side down for 2-3 minutes
- Flip the fish, there should be a nice brown crust, and cook for another 2 minutes
- Turn off the heat and let the fish sit for another 2 minutes. Cook longer if you like your Salmon well done. I prefer mine medium-rare.
- Set Salmon aside and prepare salad
- Mix lettuce, onions, pecans, cheese and olive oil and season with 1-2 tsp of sea salt
- Place lettuce onto plate and place Salmon gently on top
- Garnish plate with tomatoes, drizzle with olive oil and season with salt and pepper
