I’ve never been a big fan of pasta. Let me rephrase. I’m not a big fan of American style pasta portions. When I say American style I’m referring to the pasta dishes in most chain Italian restaurants. The portions are enough for 3 adults. Sure it’s great for left overs….for 3 days but I never feel well after consuming a dish where the primary ingredient is pasta and all other ingredients take a back seat.
That being said if you ever in Maggie Valley, NC you MUST eat at Frankies124. They do pasta in the right portions and everything is made in house.
So what do you do when you want pasta but on a diet or trying to lose weight? Instead of eliminating pasta and rice you can try Miracle (also known as Shirataki) Noodles.
Miracle Noodles is the brand name for the company Miracle Noodle. You can also find these labeled as Shirataki noodles in most asian stores.
Miracle Noodles are:
- Made of naturally water soluble fiber with no fat, sugar, or starch.
- They contain zero net carbohydrates and zero calories, no gluten -made of a healthy natural fiber called Glucomannan.
- Wheat & gluten free and kosher.
How does it work?
Glucomannan works in the stomach and intestines by absorbing water to form a bulky fiber. It slows the absorption of sugar and cholesterol from the gut, helping to control sugar levels in diabetes, and reducing cholesterol levels.
So you feel the sensation of filling up with pasta and rice with out the guilt!
How to use in your recipes:
Miracle Noodles taste like absolutely nothing. Yep, no flavor at all. They are the pasta equivalent of Tofu. You “feel” like you are eating pasta or rice due to the texture but the flavors are all from the other ingredients in the dish. The important thing to remember when cooking with the Noodles is to concentrate on your accompanying ingredients.
Warning: These noodles are packed in water and when first opened I can only describe the smell as 2 week old drain gutter water! Seriously it stinks. Rinse well and dry with paper towels before tossing them in your dish. The smell DOES NOT carry over into the food.
Where to buy Miracle Noodles:
Most asian markets will carry some form of these labeled as noodles. Our local Super H Mart carries the brand below but do not have as many shapes as Miracle Noodles. I picked up this package for $1.79 but they only carry this traditional noodle shape.
In the asian markets you will find these noodles in several different varieties:
- White Shirataki Noodles for low-carb and calories. (These are the zero carb miracle noodles)
- Matsuda Shirataki Noodles for a high fiber option. (Does contain carbs but not much)
- Brown Shirataki Noodles, with seaweed powder, for increased calcium and iron.
- Tofu Shirataki Noodles for more calcium, a uniquely different flavor and texture.
Where to buy Miracle Noodles:
The Miracle Noodle brand carries a lot more varities of Shiritaki noodles such as:
- Fettucine
- Angel Hair
- Miracle Rice
- Spinach Angel Hair
Ingredients
- 3 cups organic reduced sodium chicken stock.
- 1 clove garlic, minced.
- 1 tsp minced ginger.
- 1/4 tsp cardamom.
- 1- 7oz bag of Miracle Noodle Angel Hair Noodles.
- 1 boneless, skinless chicken breast sliced crosswise into 1/8 slices.
- 1 cup bean sprouts.
- 2 scallions, sliced into 1/4 inch pieces.
- 1 tsp chili sauce(optional).
- 1/2 lime, cut in half.
- 1/4 cup chopped cilantro.
- 1/3 cup of mushrooms-any variety (optional).
- 1 thinly slice chili pepper with seeds removed (optional).
Instructions
- In a 3 quart saucepan, bring chicken stock to a boil over medium-high heat. Add garlic, ginger and cardamom and let simmer for 10 minutes.
- In a colander rinse noodles with warm water for a couple of minutes, pat dry with a small hand towel or paper towel to remove excess water. Divide noodles into two bowls.
- Add chicken to stock and let cook for 5 minutes(until completely cooked)
- Pour soup into bowls over the noodles. Divide bean sprouts between 2 soup bowls then top each serving with half the scallions and chili sauce. Garnish bowls with a slice of lime and pieces of cilantro.

One method that’s been put fwrroad is to have on-the-fly captioning, similar to TRS or VRS. Then the newly-captioned version could be placed back on the server (with the originator’s permission) so that the next people who want captioned vieo have it on demand. I wonder what the total demand would be for such a service, compared to real-time conversations maybe equal, maybe a bit greater?Key to having such a service (aside from the law or other social program that would require or support it) is building a culture that is aware of accessibility.
