These muffins were adapted from a friend’s recipe for Applesauce and Oatmeal Muffins and are a great way to start your day! I would just make the Applesauce instead of buying it. So much better for you than store bought! The applesauce replaces oil or butter found in most muffins recipes which reduces the fat. These could be made even healthier by adding flax seed and reducing the sugar which I will try in the future.
Ingredients
- 1 cup rolled oats
- 1 cup milk
- 1 cup white whole wheat flour
- ½ cup Brown Sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- zest from 1 medium orange
- 1/2 cup chopped craisins
- 1/2 cup chopped walnuts
- 1/2 cup applesauce. Home made or store bought.
- 1 egg, beaten
Instructions
- Place oats and milk in bowl and let sit in fridge for 2 hours
- Add all dry ingredients to a bowl.
- After 2 hours remove oat/milk mixture. Add applesauce and egg and stir to combine.
- Pre-heat oven to 350º.
- Add wet ingredients to dry and mix to remove any clumps.
- Grease 15-16 small muffin tins with non-stick spray. Fill to the top with mix.
- Bake at 350º for 20-25 minutes.
- Immediately remove muffins from tin and cool on rack.
