Last weekend I took the afternoon away from the kids to visit the Le Creuset store which opened at . I have several Le Creuset pans which I’ve received as gifts over the years and always looking for a new piece to add to my collection.
I was greeted by Cody the manager and Carol the assistant manager. As it turns out Carol is also a food blogger at A Cup of Mascarpone. It’s great to meet new people with a passion for food.
Le Creuset pans heat evenly and retail their temperature. The enamel coating makes cleanup a breeze and of course the assortment of amazing colors are always a topic of conversation. I’ve used and abused my Le Creuset pans over the years and they still look brand new.
As you can tell I’m a huge fan of the pans and company and excited Le Creuset agreed to sponsor a giveaway for a 3 1/2 qt. braising pan in the winners choice of color!

Braised Pork Tacos
I left the Le Creuset store with a new 3 1/2 qt. casserole which was perfect for this braised pork taco recipe. The Le Creuset pans are very versatile and can be used for a variety of dishes and cooking techniques.
Braising is a combination cooking method which uses moist and dry heat to break down collagen in large cuts of meat. Time, heat and moisture work together to transfer tough dry cuts into tender and flavorful bites.
The basics of braising are:

Sear the meat
-
Saute the mirepoix
-
Deglaze the pan
-
Return the meat to the pan with liquid to braise
I kept the toppings simple but you could add avocados, salsa or lettuce to these tacos.
Ingredients
- 2 tablespoons canola or vegetable oil
- 2 tablespoons kosher salt
- 1 tablespoon fresh ground black pepper
- 2.5-3lb boston butt pork roast (remove any large pieces of fat before searing)
- 1 large onion, sliced
- 4 cloves garlic
- 1 cup water
- 1 15.4 oz can whole peeled tomatoes
- 3 bay leaves
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1/2 bunch fresh cilantro
- 2 tablespoons red wine vinegar

For Serving
- Corn Tortillas
- 1/4 cup chopped cilantro
- 1/4 cup diced red onion
- 1 cup crumbled mexican cheese
Instructions
- Pre-heat oven to 300ºf
- Prepare saute pan with oil over medium-high heat
- Season pork generously with salt and pepper
- Sear pork on all sides until browned
- Transfer pork to Le Creuset Braiser
- Drain fat from saute pan
- Add onions and garlic to saute pan and cook until light brown, 3-5 minutes
- Remove pan from heat and add water, scraping any browned bits from bottom of pan.
- Transfer onion/water mixture to braising pan with pork and add tomatoes, seasonings and cilantro
- Cover and cook in oven for 3 hrs.
- Remove from oven and test for doneness by either easily removing bone (if bone in) or try shredding with a fork if boneless. The pork is done if it easily shreds or bone pulls out.
- Set aside pork butt in bowl and strain liquid from braiser, reserving the onion/tomato mixture
- Remove bay leaves and cilantro from onion mixture
- Shred pork by hand or use two forks
- Add onion/tomato mixture and vinegar to pork and season with salt and pepper to taste.
- Serve in corn tortillas and top with chopped cilantro, cheese and diced red onions

This is something I’d love to try. I haven’t seen them in stores around where I live, though.
Check to see if there is an outlet store near you. They had them when I went to the outlet in Atlanta.
My favorite is the Extra-Large Double Burner Grill. I would love to have it or the Giant Reversible Grill / Griddle.

I love my French Oven. It gets lots of use making soups + chilis + stews come fall and winter!
The pans are so versatile they are quickly becoming my favorite cookware. However I think I will need a dedicated cabinet to store them in!
