These crock pot pork lettuce wraps are a healthier twist on a traditional pork taco. Typically you would smoke the pork butt in a dedicated smoker or modified charcoal grill but since most of my readers don’t have the time or equipment for this I made this one in a crock pot. Sure you will miss some of the smoky flavor and the “bark” that comes from 12 hours of smoking over charcoal but the ease of use is well worth it. I used Circle A lettuce but if you don’t have the pleasure of buying some of Jeff’s hydroponic lettuce then you can get Bibb lettuce at your local grocer. You can also pick up the broccoli slaw from your local grocer as well and mix it with your favorite slaw dressing or buy a healthy bottled variety.
For this recipe I used a 4 lb pork boneless pork butt which gave us a good amount of left overs but any pork butt between 2-4 lbs will do. Cooking times will have to be adjusted for a smaller one. I only used kosher salt for seasoning and it was great! Feel free to use any dry rub seasoning or check out ours.
